Reworking a childhood taste

Delicious Crêpes, Day 1:
Favorite co-chef took leftover homemade chicken broth, made a velouté laden with black pepper, and mixed in diced chicken, shitake mushrooms and peas. We added some fresh spinach at the last minute, and rolled it up in crêpe pancakes. Served with a not-too-bold (yeah, they exist) petite syrah. YUM.
